Healthy Noodles (No Soya Sauce)

These delicious noodles are great for a lazy afternoon or your kids lunch box. Made with ingredients lying around the house and ready within 15 mins. This recipe is sure to leave your guests asking for a second serving.

Ingredients
1 pack of spaghetti/Egg noodles
3 garlic cloves or one teaspoon garlic paste
A bunch of spring onions
1/3 cup shallots or red onions (optional)
2 bell peppers sliced 
1 cup mushrooms or shredded chicken
2 eggs 
1 large carrot sliced into 3 inch strips

Seasoning
Salt to taste
Olive oil
Malt vinegar (optional)
Ground peppercorns
Chilli sauce




Method
Boil the noodles, drain and keep aside. To a nonstick wok and add oil and then add in the red onions/shallots, garlic, carrots, mushrooms/chicken and the bell peppers. Stir fry till veggies are tender and chicken slightly browned (be careful not to brown the vegetables). Add the spring onions. Sprinkle salt and stock powder while gently mixing the contents in the wok. Then add two whole eggs and beat in the wok. Beating is easily done by pouring the eggs in the centre of the wok and stirring in circular motion. Now add the noodles and mix well. Use a pair of tongs for even mixing. Add ground peppercorns, olive oil, a teaspoon or two of malt vinegar and a dash of chilli sauce. Turn of the heat and serve hot.
